The founder of Laobian Dumplings is Bian Fu, who came to Shenyang from Hebei province in 1829. At the very beginning, it was only a little stall near Xiaojin Bridge called Majiazi. Bian was selling freshly made dumplings. The name, Laobian Dumplings, was adopted at that time. By 1870, Bian Fu’s son, Bian Degui, followed in his father’s footsteps and made improvement on the dumpling making techniques. After some intensive study and experiment, Bian Degui changes the normal fried fillings into fried feelings mixed with soup. In this way, the fillings are more loose, delicious and easier to chew, and thus endowing Laobian Dumplings with a distinctive flavor. From then on, Laobian Dumplings became a instant hit and remained a well-known food in Shenyang. In 1940, the third generation successor brought Laobian Dumplings to the most bustling North Market in Shenyang and all at once made Laobian Dumplings famous in all Northeast China.
